Scrumptious Crunchy Peanut Sauce on Fried Ramen

I've been at it again! I intended to make simple noodles with some veggies and Teriyaki sauce tonight, but then I thought, why not make the sauce a little more interesting. I decided a peanut sauce was the way to go, et voila! here is the result:

I have to be honest, I make things up as I go along, so my kitchen ends up looking like a hurricane went through it. However, when I do have a recipe I try to get things set up so they are easy to grab. Seriously, PREP EVERYTHING before you get started. Cut your veggies and assemble all your spices. You read this everywhere, and for a reason, it really helps. You don't want to scramble around finding things at the back of your cupboard (like apple cider vinegar - such a specific, non-daily item) and end up almost burning your precious onions.


 

Serves: 3 - 4

Time: 30 - 40 min

Ingredients

- Don Don Instant Japanese Style Noodles (or any noodle you like; Udon, Zoodles, Spaghetti)

- Arugula - 75g

- Carrots - 350g

- Vegetable Oil

- Fried Onions to serve

Sauce

- 1 medium Onion - approx. 70g

- 1 clove of Garlic

- Walnuts - 15g

- Peanut Butter - 5 tablespoons/75g

- Tahini - 1 tablespoon/15g

- Teriyaki Sauce - 3 tablespoons/45ml

- Apple Cider Vinegar - 1/2 tablespoon/7,5ml

- Maple Syrup - 2 tablespoons/30ml

- Water - 120-150ml

- Veggie broth powder - 2 teaspoos/30g

- Sambal Oelek (optional) - knife point

Instructions

1. Dice the onion and cut the carrots into your desired shape.

2. If you like your carrots a bit softer, pre-boil them for 3-5 minutes.

3. Sweat or fry the onion in some vegetable oil for a few minutes before adding the crushed garlic.

4. Fry carrots in a large pan. Add some Teriyaki sauce for flavor.

5. Crush the walnuts and add them to the onions.

6. Add peanut butter, tahini, teriyaki sauce, apple cider vinegar, maple syrup, and some water.

7. Add noodles to the carrots and stir fry.

8. Add the rest of the water and veggie broth powder to the sauce. Also add Sambal if desired.

9. Add sauce to noodles, mix well.

10. Mix arugula with the noodles just before serving.

11. Serve and top with fried onions.
