Teriyaki Leek Quinoa

This is one of my go-to quick weekday meals. It is super simple; barely any prep and only a few ingredients. All you need is a couple of leeks, quinoa, teriyaki and soy sauce, and your preferred toppings. I tend to go for feta* cheese and crunchy fried onions. Walnuts are yummy too. The exact ratio of teriyaki to soy sauce is different each time and would depend on what you like, but the teriyaki should be more than the soy sauce. The dish has a nice mild flavour. If you want to spice it up a little, just add a crushed clove of garlic and some dried or fresh pepper.
*I have been leaning more towards a vegan diet lately and have been researching vegan cheeses. I haven't found a feta alternative yet, but I am intruiged by the Mozarella Aquafaba Cheese by Avocados and Ales.

Serves: 2
Time: 15 minutes
Ingredients
- 2 big leeks
- 1 cup of quinoa
- Teriyaki sauce (to taste)
- Soy sauce (to taste)
- To serve: feta or (vegan) alternative cheese, crispy onions, walnuts
Instructions
1. Boil water and add quinoa.
2. Cut leek and sautee or steam in a large pan.
3. Mix in Teriyaki and Soy sauce.
4. Mix quinoa with leek and add moe Teriyaki and Soy sauce.
5. Serve and garnish with desired toppings.
