Avocado Pesto Pasta

Can you resist the calling of pasta? I know I can't, I love pasta. One of my favorite quick pasta meals is to turn an avocado into sauce; it is highly versatile. All you need is an immersion blender (or a regular blender or food processor), throw in anything you like and mix away. My sauce usually involves some sort of nuts, lemon juice, and some simple spices. Below is what I mixed yesterday, but it really is up to taste how you like it. So, experiment, add other nuts or spices, or take out the garlic or lemon juice, whatever floats your boat.

* This recipe is just for the sauce, adjust the amount of pasta as needed.


 

Serves: 3 - 4

Time: 15 minutes

Ingredients

- 1 Avocado

- Squirt of lemon juice (concentrated from a bottle or half a lemon)

- 1 clove of garlic

- 50ml water

- 1 teaspoon of vegetable broth powder

- 15g fresh basil leaves

- 100g fresh (baby)spinach

- Cherry Tomatoes

- Handful roasted cashews

- Pine nuts

Instructions

1. Boil pasta according to directions.

2. Roast cashews in a pan without oil.

3. Put avocado, lemon juice, garlic, water, vegetable broth powder, basil, 20g spinach, and roasted cashews in (immersion) blender and blend until smooth.

4. Roast pine nuts in a pan without oil.

5. Halve cherry tomatoes.

6. Put it all together.
